Makes enough for 10 servings
Ingredients for the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Citrus Syrup: Put all the ingredients inside a pan, heat until it reaches a simmer, stirring to dissolve. Then, turn off the stove and let it to cool entirely. Pour into an sealable bottle, close it keeping it in the refrigerator, it will last for around four weeks.
To make Premix: Combine all the liquid ingredients in a sizeable container, allow it to infuse for one hour, then pass it through preferably using a fine cloth, so it's completely strained.
When ready to serve: Measure 85ml from the premix into your stirring glass filled with ice, gently stirring lightly for one minute until cold. Filter into an chilled martini glass or equivalent, garnish with some cranberries and finish using a light spray with the mandarin essence over the drink.
